I t’s a Friday night and you and your roommate or loved one feel like staying in, watching a movie, and just enjoying a nice home cooked meal. Here are our favorite recipes for two people you can enjoy making together!

Shrimp Alfredo Pasta

Ingredients:

4 oz. Fettuccine or penne pasta

4 cloves of garlic, finely chopped or minced.

4. Oz shrimp (frozen or raw)

2 tbsp butter

½ cup cream cheese

1 cup heavy cream

1 cup chicken broth

Grated parmesan cheese

1 medium-sized finely chopped onion

Method:

  1. Boil the pasta separately and set it aside.
  2. Season shrimp with salt, pepper, and red chili flakes or paprika.
  3. Saute in butter.
  4. Remove from heat and make sure they are not overcooked.
  5. In a saucepan, melt butter and saute chopped garlic cloves and onion until aromatic
  6. Add chicken broth and let the sauce simmer for a bit before adding the cream and heavy cream, mix gently until combined. Season with salt, pepper, and cayenne pepper to taste.*
  7. Add parmesan cheese and turn off the heat when the sauce has a creamy consistency.
  8. In a bowl, add boiled pasta and shrimp and coat them with the delicious sauce.
  9. Serve and enjoy!

*You can also make your white sauce by another recipe using flour and butter.

Good Ol' Steak and Roasted Potatoes

Ingredients:

2 steaks

1 rosemary sprig

1tbsp olive oil

2 garlic cloves, minced or finely chopped

2 medium-sized potatoes

2-3 tbsp vegetable oil

½ onion, finely sliced

4 tbsp butter

Method:

  1. Preheat oven to 400° Celsius
  2. Season steaks on both sides generously and set aside
  3. Peel and dice the potatoes into large cubes, boil potatoes until they are half cooked, and remove.
  4. In a bowl, coat the potatoes with 2 tbsp of oil, 1tbsp of minced garlic, and finely chopped parsley. Shake the bowl until all the potatoes are properly coated.
  5. In a skillet, melt butter and add olive oil on medium-high heat and add the seasoned steaks. Sear on both sides until browned.
  6. Add potatoes to the skillet and place it inside the oven for 15-20 minutes or until the meat is cooked to your desired preference.
  7. Mix two tbsp of butter, 1tbsp of minced garlic, and 1tsp of finely chopped rosemary in a bowl.
  8. When you take out the steak from the oven, place a spoon of garlic butter on each steak until it melts, then coat the potatoes.
  9. Serve and enjoy.

Honey Garlic Chicken

Ingredients:

1/4 cup soy sauce

3 tbsp. honey

2 cloves garlic, minced

Juice of 1 lemon

1 tsp. sriracha

1 tbsp. sesame oil

1 tbsp. cornstarch

1 lb. chicken breast

Sesame seeds, for garnish

Method:

  1. Preheat oven to 350 degrees
  2. For the glaze: Whisk together soy sauce, honey, minced garlic, lemon juice, sriracha sauce, sesame oil, and cornstarch.
  3. Season the chicken with salt and pepper
  4. Brush a pan with butter and sear the chicken on both sides for 4 minutes until it is cooked.
  5. Shift the chicken to your preheated oven. Bake for 20-25 minutes.
  6. Brush the glaze on the chicken after taking it out, sprinkle sesame seeds, and serve.

Garlic Rosemary Chicken

Ingredients:

3 tbsp olive oil

1 full garlic head

4 chicken breasts

1/4 cup sliced mushrooms

2 tbsp unsalted butter

1/4 cup white wine

2/3 cup chicken broth

3 sprigs of fresh rosemary

Juice of 1/2 lemon

1/4 cup spinach or baby spinach leaves

Method:

  1. Drizzle one teaspoon of oil and wrap aluminum foil around a full garlic head and put it in an oven to bake for an hour. the oven should be preheated to 400° Celsius.
  2. Take it out, pick apart the cloves and set it aside.
  3. Season chicken breasts with salt and pepper.
  4. Drizzle 2 tbsp of oil on a pan and sear the chicken breasts on both sides for 8 minutes each on medium-high heat. Set them aside.
  5. Turn the heat down to medium, drizzle more oil, and fry seasoned mushroom slices until they are slightly wilted. 
  6. Add butter to the pan and let it melt. Once it has melted add the garlic cloves, white wine, chicken stock, and rosemary sprigs. Let simmer for 8 minutes until it is reduced.
  7. Add the chicken breast and spinach. Cook until the spinach has wilted.
  8. Serve with mashed potatoes.
